ZUCCHINI PANCAKES WITH AVOCADO AND TOMATO SAUCE
Ingredients: Preparation:
* 1 medium grated zucchini,
* 1 egg,
* ¼ cup yogurt,
* ¼ cup fresh cheese,
* ½ cup spelt flour, and
* ½ teaspoon baking powder.
In a large bowl, mix the grated zucchini, egg, yogurt, and fresh cheese until well combined. Add the spelt flour and baking powder, and mix well until smooth and lump-free. Cook the pancakes for 2 to 3 minutes on each side, or until golden brown.
Sauce:
* 1 ripe avocado,
* 1 tomato, peeled and deseeded, and
* 1 tablespoon olive oil.
Wash the avocado and tomato. Peel the avocado, remove the pit, and scoop out the flesh. Place the peeled avocado and deseeded tomato in a blender. Add the olive oil and blend until smooth. Add a little water if needed to reach the desired consistency.
